#1 Sweet Potato Brownies

  • 1 cup mashed sweet potato
  • 2 eggs
  • ½ cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla
  • ½ cup coconut flour
  • ⅓ cup cocoa powder
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ½ cup dark chocolate chips (optional)

Preheat oven to 350º. Lightly coat a 9×9 inch pan with coconut oil. Mix well the sweet potato, eggs, honey, coconut oil, and vanilla until. Add flour, cocoa powder, baking powder, and salt (and chips). Mix gently until combined. Pour into greased 9×9 inch pan and bake for 20 minutes. Brownies are done when you can insert a knife and it comes out clean.

  • 2 small sweet potatoes, peeled and cubed
  • ½ pound Bacon
  • 1 tbsp honey
  • 1 tsp water
  • cayenne

Preheat oven to 400ºF. Cut bacon into 2 or 3 even pieces. The size of your bacon depends on how small your sweet potato cubes are cut. Wrap each sweet potato cube in bacon (toothpick optional to hold it all together). Brush each with honey and water mixtures. Sprinkle with cayenne. Bake about 20 minutes or until bacon is crispy and sweet potatoes are soft.

#3 Steak Salad With Roasted Sweet PotatoSteak Salad with Roasted Sweet Potato

  • 1 oz grilled steak
  • 1 cup roasted sweet potato cubes
  • Handful of mixed lettuce
  • Dressing: drizzle with oil and vinegar

This is an easy leftover recipe.
Any grilled steak sliced thin will do.

To roast the sweet potato: Cube sweet potatoes, toss with coconut oil or olive oil, bake at 425ºF until fork tender.

  • 1 small sweet potato, peeled and spiralized
  • 1 cup mashed sweet potato
  • 2 eggs, beaten
  • 3 tbsp coconut milk
  • 1 tsp cinnamon

Mix all ingredients together and drop ½ cup onto hot waffle iron sprayed with coconut oil. Cook until outside is crispy.
